Toasted lunch getaway – Beef, veggies and provolone sandwich

Lets say that you are working on Saturday and need something easy and as it happens you have a beef filet laying around in your bridge.

Sear the beef filet in a frying pan, after marinating it with a little salt and pepper – I like mine medium rare so you know – it doesnt take much time. Take it of the pan, let it sit for a little bit, while you add sliced onions, peppers and mushrooms in the pan. Gently toss them until properly glazed and start the assembly. Top the sandwich with provolone and lightly toast it.

A great touch is the bread you choose. I would recommend a dark type of bread with seeds.

You can use chicken as well for your protein but keep in mind that you need some extra marinade with the chicken breast (garlic)
